Cardamom.

Cardamom are used as flavourings and cooking spices in both food and drink, and as a medicine. It is one of the most expensive spices by weight but little is needed to impart flavour. It is best stored in the pod, as exposed or ground seeds quickly lose their flavour.

Cardamom production began in ancient times, and has been referred to in ancient Sanskrit texts as ela. The Babylonians and Assyrians recognized the health benefits of the spice early on, and trade in cardamom opened up along land routes and by the interlinked Persian Gulf route controlled from Dilmun as early as the third millennium BCE Early Bronze Age, into western Asia and the Mediterranean world.

Blackpepper.

Black pepper is the world's most traded spice, and is one of the most common spices added to cuisines around the world. Its spiciness is due to the chemical compound piperine, which is a different kind of spicy from the capsaicin characteristic of chili peppers. It is ubiquitous in the Western world as a seasoning, and is often paired with salt and available on dining tables in shakers or mills. The pepper plant is a perennial woody vine growing up to 4 m (13 ft) in height.

Black pepper is native to South Asia and Southeast Asia, and has been known to Indian cooking since at least 2000 BCE. Peppercorns were a much-prized trade good, often referred to as "black gold" and used as a form of commodity money.

Cloves.

Cloves are used in the cuisine of Asian, African, Mediterranean, and the Near and Middle East countries, lending flavor to meats, curries, and marinades. Cloves may be used to give aromatic and flavor qualities to hot beverages, often combined with other ingredients such as lemon and sugar. They are a common element in spice blends, including pumpkin pie spice and speculaas spices.

The clove tree is an evergreen that grows up to 8–12 metres tall, with large leaves and crimson flowers grouped in terminal clusters. The flower buds initially have a pale hue, gradually turn green, then transition to a bright red when ready for harvest.

Cinnamon.

Cinnamon is a spice obtained from the inner bark of several tree species from the genus Cinnamomum. Cinnamon is used mainly as an aromatic condiment and flavouring additive in a wide variety of cuisines, sweet and savoury dishes, breakfast cereals, snack foods, teas, and traditional foods. The aroma and flavour of cinnamon derive from its essential oil and principal component, cinnamaldehyde, as well as numerous other constituents including eugenol.

In 2018, Indonesia and China produced 70 percentage of the world's supply of cinnamon, Indonesia producing nearly 40 percentage and China 30 percentage.

Turmeric.

Turmeric powder has a warm, bitter, black pepper-like flavor and earthy, mustard-like aroma. Turmeric has been used in Asia for centuries and is a major part of Ayurveda, Siddha medicine, traditional Chinese medicine, Unani, and the animistic rituals of Austronesian peoples. It was first used as a dye, and then later for its supposed properties in folk medicine.

Turmeric is a perennial herbaceous plant that reaches up to 1 m (3 ft 3 in) tall. It has highly branched, yellow to orange, cylindrical, aromatic rhizomes. Turmeric grows wild in the forests of South and Southeast Asia, where it is collected for use in classical Indian medicine.

Nutmeg.

Nutmeg is the spice made by grinding the seed of the fragrant nutmeg tree (Myristica fragrans) into powder. The spice has a distinctive pungent fragrance and a warm, slightly sweet taste; it is used to flavor many kinds of baked goods, confections, puddings, potatoes, meats, sausages, sauces, vegetables, and such beverages as eggnog.

The earliest evidence of use of nutmeg comes in the form of 3,500 year old potsherd residues from the island of Pulau Ai, one of the Banda Islands in eastern Indonesia. In 2019, global production of nutmeg was 142,000 tonnes, led by Indonesia, Guatemala, and India, having 38,000 to 43,000 tonnes each and a combined 85 percentage of the world total.
